How many boxes included?

I thought it was supposed to be 3 boxes, but it was only one? For $15.00? I won't be ordering again if it's that expensive.

Is this any good when you cook it up and save it for lunch? So far, my gluten free pasta is only good right after cooking.

I like to cook it a tad longer then box says. I have made pasta salad with it and it's great the next day
