After managing to pull off some smoked ribs on a standard BBQ, my wife thought it would be a good idea to get a proper smoker and showed me one online. So I told her I'd do some research and the Oaklahoma Joe's came up time and time again as a good entry level. I visited a place that sells BBQ's as I'd whittled my shortlist down to two (this and a char-griller) so I could see them both in the flesh (or metal in this case). I decided then that the Oaklahoma Joe's was the way to go as the steel was a bit thicker which meant it would hold it's heat better. I picked this up during Amazon Prime Day and bagged a really good bargain, it was delivered really quickly (so quick I didn't have enough time to clear space in the shed). I managed to build it up myself relatively easily by resting it on the polystyrene that protected it in transit to get the legs on. I would recommend having help when attaching the Firebox to the main smoking chamber as it is really heavy. I managed to prop it up on a chair and some polystyrene again when I bolted mine together. Make sure you season your smoker before you use it, this will get rid of any residual chemicals left over from the manufacturing process and ensure you don't spoil your food the first time you cook on it. There's videos on YouTube and you can also find a guide on the Oaklahoma Joe's website. When it comes to fuel for cooking, the benefit of an offset smoker is the ability to use real wood. I used kiln dried Oak firewood. I cut mine down to thinner splits as larger ones can smoulder instead of burn. Space! So much grill space on this thing. I managed to fit 8 racks of beef ribs on in a single cook easily. The grates are ceramic coated, non stick and very heavy. There's even grates for the Firebox so you can actually grill/sear whilst smoking. I would recommend buying a seal for around the smoke chamber door to help keep the smoke in, but I wouldn't worry too much about trying to seal every gap on the unit. There are some minor things to look out for though. The temperature differences from one side to the other are drastic, so make sure you rotate your meat during cooking. Also, you can wrap one of the grates from the Firebox in tinfoil and use this as a baffle plate where the heat enters the smoke chamber just to get the heat down a little and reduce the intensity. There are plenty of mods available for these smokers, but as a starting point for anyone looking to get started in the addictive world of smoking meat, you can't go wrong.

After a lot of research online, i decided on the OKJ Highland. I seasoned it as per the instructions and lots of YouTube instruction and also purchased the mod kit to help seal the door, add the additional temp gauge and seal the joints. And now it works brilliantly. Yes the paint flakes off the firebox, bit if you re season it after use it will not rust. I absolutely love using it and have done some fantastic briskets and pulled pork joints that are several levels above anything you can buy for the oven. Now, a few months into ownership and I am looking at the next mods to increase the amount of grill space on bbqmods.com I would buy another in a heartbeat, but I don't think I will ever need too.

It arrived in one big sturdy cardboard box but it had taken some damage somewhere along its journey with a few holes & compression dents in the heavy duty cardboard which did its job & protected the unit inside. It's heavy & will require 2 people at stages of its build. The legs & wheels are the single biggest let down & have caused me frustration with the poor alignment causing the legs to not fit properly & I will have to drill new holes to fix. The wheels wobble everywhere when you move it in to place & are reminiscent of Coco the clowns car where you expect them to fall off at any given minute. Lots of screws & bolts (provided) but it's pretty straight forwards to put together (easier with two people), also benefits with the application of a food safe sealant around the joins & smoker tape around the lids of the two chambers. There's a few minor niggles that I'll straighten out over time but for the most part It's a cracking piece of kit to get in to long duration food smoking with & is a significant upgrade to my barrel smoker. It looks great in the garden & friends always remark about it when visiting. Its big enough to be able to provide enough food for 10 people (from personal experience) but you could probably do more quite easily. I've since purchased a cover for it which has been designed specifically for it & an extra thermometer as it only comes with one despite having two thermometer ports.

Just amazing. Great value for money and with a few minor modifications can perform as well as far more expensive alternatives.

Brilliant product

I have used this Oklahoma Joes Highland smoker about twice a week for the last 4 months. The product came in a very large box and is very heavy. It was well packaged and easy enough to put together. I fitted some seal around the main chamber lid to keep the smoke in better. Having never used a smoker like this before I found it a little difficult to manage the heat in the main chamber but found that I had more consistency with higher quality coals. I also fitted another thermometer and found that this helps with judging for an even cook. I have used the BBQ to smoke and grill and it works perfectly in either configuration. The fire door vents and the chimney vent can be adjusted to keep a decent set of coals going for a very long time for those all-day smokes. I did make a separate fire basket to keep the hot coals away from the outer, which works a treat. Some of the paint has come off the underbelly of the beast but a quick spray with some Hammerite bbq paint has put this right before putting it away for the winter. There is loads of room in the main chamber for cooking even really big slabs of meat. The firebox is a good size and can accommodate a full bag of charcoal and a couple of sticks if required. Overall very happy.

Très bon barbecue et très beau

Gruß an alle Smokerfans und die die es noch werden wollen. Habe Gestern meinen neuen Smoker geschickt bekommen. Spedition hat genau in der vorher abgemachten Zeit geliefert. Das kleine Monster kam in einem Paket mit Namen 86 kg. Zuerst auspacken. Dazu hab ich allein ca: 45 Minuten gebraucht. Alle Teile waren vorhanden. Dabei viel mir auf das alle Teile sehr "Wertig" erschienen. Besonders beeindruckt war ich das alle Kleinteile, ( Schrauben, Muttern und Ähnliches) sauber in Folie eingeschweißt waren. Auch auffallend, die Bedienungsanleitung zum Aufbau. Sehr übersichtlich und auch für "Dummies" verständlich. Nachdem mein Freund dazu kam gings ans zusammenbauen. Nach ner Stunde war auch das erledigt. Am nächsten Tag gings ans "Einbrennen". Das hab ich mit guter Buchenholzkohle gemacht. In Internetforen fand ich eine Anleitung zum Einbrennen. Dort war von 4-5 kg. Holzkohle zu lesen. Genommen hab ich schließlich 1 kg. Und selbst das war zuviel. Das schwarze Ungetüm wurde viel zu schnell heiß. Hab aber aufgepasst und im Wechsel den Garraumdeckel geöffnet, geschlossen oder nur einen Spalt aufgelassen. ( Holzscheit) Nach etwa 2 Stunden alles belüftet, rest Kohle raus und abkühlen lassen. Eine 1/2 Stunde später das Teil von Innen und Außen mit Speiseöl eingerieben. Und wieder gings ans Anfeuern. Nur dieses mal hab ich nur noch ca: ein 1/2 Kilo Kohle genommen. 2 Blatt Küchenkrepp mit Spiritus getränkt unter die Kohle, den Rest besorgt die Grillmaschine. Kein Fön, kein Blasen oder sonstiges. Der Smoker hat einen gewaltigen "Zug". Könnte wahrscheinlich ohne Probleme über 250 Grad erreichen. Dieses mal kann ich die Temperatur besser halten als beim ersten Anfeuern. Ohne viel die Klappen zu öffnen oder zu schließen bleibt die Hitze bei konstanten 120-130 Grad. Die Verarbeitung ist so gut, das es so gut wie nirgendwo außer aus dem Kamin qualmt. Trotz Made in China ist Dichtungsband oder ähnliches nicht nötig. Das Thermometer zeigt, für mich, die exakte Temperatur an. Schon wenn starkes Sonnenlicht auf den Smoker fällt kann man schon Veränderungen an der Temperaturanzeige erkennen. Das reinigen war ebenfalls leicht. Feuerklappe an der Seite öffnen, die Restglut mit einer Kaminschaufel auf ein Backblech schieben. Feuerrost rausnehmen, (natürlich mit speziellen Handschuhen), und die Asche mit einem Handfeger ebenfalls aufs Backblech fegen. Schon ist der Smoker zu neuen grilligen Schandtaten bereit. Wenn ich meine ersten Smokererfahrungen gemacht habe werde ich diese Rezension erweitern. Mein Tip, das Gerät ist sein Geld wert und das sollte man auch anlegen. Mit Billigsmokern hat man bestimmt auf Dauer keine Freude. Das Preis-Leistungsverhältnis stimmt genau. Wie heißts so schön bei "Edeka", den Frauen die Deko, den Männern das Fleisch! Hallo zum 2 ten Teil meiner Recension, Habe gestern am 09.07.2017 meinen Smoker eingeweiht. Es gab Fleischspieße, Rind und Pute, vormariniert. Hab nach diversen Tabellen ( Kerntemperatur ) das Fleisch zubereitet. Hat nicht ganz gefunzt. Das Rindfleisch war schon durch. Also bei ca: 120 Grad im Garraum und die Kerntemperatur auf 50 Grad und dann nochmal in die Feuerkammer und jede Seite 1-2 Minuten kross nachgegrillt. Und siehe da, das Fleisch war Medium. und richtig gut im Geschmack. Meine Gäste waren begeistert. Einen Tag später haben meine Frau und ich beschlossen ein 300 Gramm Rib Eye Steak zu Smokern. Buchen und Obstbaumchips in Jim Beam Whiskey mit Wasser eingelegt. Den Smoker bei 120 Grad gehalten. Das Steak drauf und ab und zu die getränkten Chips in die Glut gegeben. Dieses mal hab ich bei einer Kerntemperatur von 45 Grad das Smoken aufgegeben und das Fleisch direkt in die Feuerkammer gegeben. Jede Seite 3 Minuten über der heißen Kohle. Das Ergebnis war ein fantastisches Stück Fleisch das ein wenig rauchig schmeckte. Es war Superzart und Medium - Medium Rare. Den Whiskey hab ich persönlich nicht rausgeschmeckt. Vielleicht bekommt man den Geschmack wenn man das Holz nur in Whiskey ohne Wasser einlegt. Also Leute weitemachen, nicht gleich aufgeben beim Smokern, viel Spaß und Guten Fleischhunger!!!

Ich hatte bisher noch keine großen Erfahrungen mit einem Smoker, habe mich jedoch lange eingelesen. Die Materialstärke ist, für diesen Preis bemerkenswert und übertrifft die der Smoker aus dem Bauhaus bei einer ähnlichen Preisgestaltung. Beim Einbrennen wurden ca. 1,5 KG Holzkohle verwendet und der Smoker konnte die Hitze (120 - 130 Grad) gut 4 Stunden lang halten. Leider muss ich auch ein kleines Manko, vielleicht auch ein Bedienungsfehler erwähnen. Bei direktem Grillen mit Kohle, blätterte trotz Verwendung der Feuerroste, die Farbe im unteren Bereich der Garkammer und der Feuerkammer ab. Das ist jedoch nur ein kleiner optischer Mangel und kann mit etwas hitzefester Farbe wieder korrigiert werden.
