Can you control via your phone when to start and stop the white noise?

No, you can only control sounds, length and volume via the controls on the device

When I adjust the volume control it interferes with the sound by making a crackling noise. Is this normal?

Not as far as I’m aware. It was a gift for my daughter and she has never mentioned this, so I’m guessing not

What sort of white noise is it? And do you need to connect via Bluetooth to listen to the white noise?

There are two different white noises already set up as part of the bear. One is more of a wave and the other is slightly higher pitched. You don’t need to connect it to Bluetooth to play these noises. We have found the Bluetooth setting useful for the car, our boy holds the bear while he’s sitting in the car seat and we can play Disney music and nursery rhymes to it from Spotify from our phone via Bluetooth. I love that you can plug this in then to charge it so no replacing batteries every few weeks like other white noise machines
