I was told matcha tea is bitter and it shouldn't be sweet, is that correct?

I think it depends on the grade, but I haven't tried many to compare. I don't think it's supposed to taste sweet though.Btw. I wasn't very pleased that this was described as being premium grade and they sent me medium grade. I think medium or culinary is more bitter than premium grade matcha.

Is there a certificate which confirms the authenticity of this product being Organic?
