Good Quality Cast Iron
The Paniyaram/Paddu pan is of good quality and pre-seasoned so you can start to use it straight away after just a normal wash,

Once seasoned, it gives crispy paniyarams
Had to season by heating and applying a coat of oil. And the first batch did stick (I expected and tried with small quantity to avoid wastage). Second usage yielded good paniyarams which did not stick. Taste was nice, better than non stick ones. Hope that with good maintenance the pan should work well for a long time.
