What kind of steel is it?

I don't know what kind of steel it is. But, I do know that I have field dressed 4 deer and 3 sheep with them and have not had to sharpen them yet. I would recommend these knives to any one who hunts.

What size belt does the sheath fit?

It has a nylon belt loop. I wore a 1.5"tactical belt and had plenty of room for a bigger belt.

is it easy to get the inside blade out

Both of the blades come out and go into the case. The smaller one is super sharp, my husband loves it.

Can it be used at a fillet knife?

Negative, to be a good fillet knife it must be thin and flexible. This is a great gutting knife, minus hip splitting as it is a little small for that. But if you want a good fillet knife, buy a fillet knife
