Well it is pectin but packaging does not show what type of pectin it is and what the source is. My experience was - it sets instantly upon contact with liquid, regardless of sugar/acid and heat. So it seems to be an instant variety of pectin suitable for freezer jam maybe. Due to the rapidity of the gelling, the pectin does not seem suitable for making cooked jams which require certain amount of cooking. It may work for jelly but the problem is that it is turning lumpy or grainy when added to liquid, so there is not enough time to stir it in. I wish the package had directions on how to use, amounts etc as it is a very hit and miss process right now.

The product appeared entirely different from what had been endorsed... haven't used it, will know then.

This pectin does not set. There is clearly something very wrong with the product. The packaging also does not say whether it is high-methoxyl (HM) or low-methoxyl (LM) pectin. Moreover, it is an expensive product - awful experience.
