Q: Will the ink hold up in a freezer, I.e. if I stamp the “packed on” date on some Tupperware or a vacuum sealer bag?

Unlikely that it will hold up if you stamp it on an adhesive-backed paper like a label, because the ink is water-soluble. If you do it straight on the plastic, it won't even get a chance to because plastic isn't porous, so there's nothing g for it to, however minimally, set into. If you're looking for something to label with, I would suggest something like a PTouch (or similar brand) label maker that you can type what you want in, then it prints on the label tape inside the machine. Or just plain ol' permanent markers. (Tip: one way I have found for permanent markers: VERY lightly press on the writing with a paper towel, the excess ink will come off, and what is left will stay there. But it won't work with date stamp ink.)

Q: Where can I get a ink replacement? there's too much indentation in the pad, it does not ink all the numbers?

See if you can pull the ink pad off and reverse it. Messy, but it has Sotheby’s for me with other pads in the past. I assume you have Re-inked it and that didn’t raise the surface.

Q: Does this come in red ink? My files will get lost with black ink.

The pad is removable, and I think there are replacement pads available. Then you can have whatever ink color you want.
