PERFECT for Gluten-Free Low FODMAPS Baked Items
Bought this as recommended by the gluten-free flour I was using to make some desserts for a gluten and FODMAPS intolerant relative that was visiting. I was terrified that nothing would turn out or be "terrible". EVERYTHING was delicious! This brand was specifically recommended by an expert dietician/chef and now I know why! Would recommend without hesitation - despite the high price.

In doing my research on Xanthan Gum, I was looking for a corn free base due to allergies and this is what I found and thought it may help others wanting to know more about this product, it maybe a little pricey for only 2oz to some but is so worth not having other health issues that other forms of Xanthan Gum can cause in some and besides a little bit goes along way! The Authentic Foods Xanthan Gum is a high quality product that is derive from a fermentation process using the bacterium Xanthomonas campestris. This bacteria was discovered on plants found in the cabbage family. The gum is actually the cell wall surface of the bacteria that is separated by a complex enzymatic process. During the fermentation process, the bacteria is fed glucose and minerals. When completed, the mixture is pasteurized to kill the bacteria. The outer skin is then removed by a series of liquid enzyme reactions leaving the outer skin as a solid material. The gum is then wash, dried and milled to a fine powder. This xanthan gum is an excellent substitute for gluten (the protein which gives wheat flour its structure). Use it along with non-gluten containing flours to make gluten free baked goods that have a great structure and texture. CELIACS MIGRANEURS ALLERGY-SUFFERERS, TAKE HEED!
After the worst year of my life suffering with constant migraine headaches, I recently read that xanthan gum comes from bacteria, and that the the bacteria are grown on a carb base. The carb base is usually corn, but can be soy or dairy or anything else. Minute amounts of the carb base make their way into the final xanthan gum product without being listed on the label. I am allergic to corn and a little research revealed that the xanthan gum I was using was made from a corn base. The 100% pure xanthan gum I was using to make my gluten free bread was causing the headaches! I tried making my bread with other replacements: guar gum, glucomannan konjac root, egg whites, flax eggs, but nothing gives gluten free bread that "real bread" quality I crave like xanthan gum. A little more research and emailing and I was told that Authentic Foods Xanthan Gum is made using a cabbage base. Have now made a couple batches of bread with it and it is great! Wonderful quality bread, and, best of all, no headaches. Now I would like to just get a hold of the people who decided it was not necessary to warn allergy sufferers of this potential hazard and zap them with a year of constant severe migraine headaches.

Great product!
I bought this for baking with gluten free flour. This helps the dough stick together to get the proper texture for cookies or breads. The only warning I give you is follow a recipe online that uses this because if you out too much it can mess with your digestion and you may spend the night on the toilet!

Works as intended
It's exactly as stated - Xanthan. I've found I've been using this more and more for Keto type baking and as a thickener for many applications . I think I need to get a larger amount as I'm going through it faster than anticipated. I can always refill this handy container.

Got this to slightly thicken and stabilize vinaigrettes, as our cooler is so cold that the oil separates, and it did the trick
