A SMOKEY SALTY LIP SMACKING GOOD ADDITION TO FOODS
While this spice mixture is called a rub, I only use it as a "finishing flavor" in the event I find the meat is a little on the bland or under salted side. I generally avoid spice mixtures such as this because the first ingredient is SALT. I buy spice mixtures without salt as I can better control the salt content if I add it separately. This mixture is about $24.00 a pound and I can buy pretty nice salt where I live for 50 cents a pound. It is not logical to spend $24.00 a pound for something where the main ingredient is salt. Now how much of this mixture is sodium? The label states that there is 220mg. of sodium per gram and the are 170 servings in the 6 ounce bottle. There is an average of 5 to 6 grams of sodium per teaspoon. This is a fine salt so it will be heavier than say a Kosher large crystal salt. That means 1 teaspoon contains about 1320mg. of sodium. Plain table salt contains about 2400mg. per teaspoon. That means this spice mixture is a little over 50% sodium. That also means a teaspoon would represent 54% of an adults daily salt intake (assuming a 2000 calorie a day food intake.) OK, now I think you see why I prefer a no salt spice mixture. I can spice a food up without concerns for a sodium overload. At the same time, if I pull something off the BBQ, slice and taste, and find it lacking in flavor or salt, I will grab this bottle and use it as I would use a salt shaker (with extra flavor). It will therefor last me a long time. Used as a rub, I would get about 6 chickens or pork roasts out of a whole bottle, at most. Much more logical to do an internet search for rub recipes, buy your raw ingredients by the ounce or pound, grind the seeds, mix it all together, put into a jar or Tupperware, use generously what you need, and put the rest in the fridge (to keep the spices fresh). Remember, once seeds are ground, they will be exposed to air and will start losing their flavor and aroma. Most bulk spices used, from stores with bulk spice bins, will run you 30 to 50 cents and ounce. If there are no stores like this in your area, hunt the spice mail order sources - be careful however as prices run a huge spread for the same item depending on where you buy it. Figure in the postage costs also. Remember, the more you buy, the cheaper per pound the postage costs (usually). Many online baking places also sell teas, nuts, candies, and other baking supplies. With Everglades Cactus Dust, with its shaker top, just set it out on the table with your other foods and condiments, and let folks add their own. We all don't have the same "salt satisfaction level". Adding salt and smoke to the finished dish is what some folks ask for even when we taste the item and think it is salty enough. In a side note, I also like it sprinkled on the top of a dish of potato salad or on certain pizza pies. Gives a nice red cast and flavor "punch" to the top from the paprika.. Hope this helps someone.

For that hint of smoky flavor
This is a fun seasoning to spice up a recipe, where you might want it to taste a bit smoky or BBQed. I love adding it to hamburgers and caramelized onions. A bit pricey, but it lasts quite a while.
