This simple device works perfectly to shave fresh truffles. The blade is sharp; it's easy to adjust the thickness of the slice, and easy to clean. If I was using it to shave something hard, like high quality chocolate, I might be concerned about the blade's ability to maintain its edge; but, so far, I've only used it for truffles, so cannot comment on edge retention.

Why did you pick this product vs others?: The tooth blade on this does not work very well for making smooth thin slices. The teeth did grooves into it and has such you cannot set it very thin. It also leaves slices that have the teeth marks in them. Not recommended.

Great utensil

Excellent tool for the money. Provided high quality shavings . I felt the tool did justice in honouring a wonderful large white truffle.

It worked well a couple of times, but after that, the adjustable blade became shaky. No matter how much I tried to fine-tune it for precise cutting, the truffle slices still came out too thick. I'm currently using a vegetable peeler instead—it gives me a better feel when slicing the truffle, & it can achieve the same thinner slices with better control.
