I'm looking for options to test "leaf toughness" and was wondering if this penetrometer could work for this purpose?

I would not recommend using this for leaf toughness analysis. This is for field testing/typing spoil (normally for excavation in the construction industry).

Will it work for fruits too?? and What´s the scale range? thanks

It would not be accurate with fruit because of the thickness and hardness of the skin. It could give you the hardness of the skin for whatever value that may be but would not tell you the ripeness of the flesh of the fruit.
