What are the dimensions of the turner head?

Base of turner is 2 3/4 inches ( closet to handle ) and wides to 4 inches at the farthest point. The length is 6 inches.

Do fried eggs stick to the tip of the turner? I have that problem with my other turners!

No, eggs don't stick. I've had turner for several months now and it's the best one I've seen yet. Doesn't melt on a very hot pan, which is one of the best features!

Is the head stiff enough to break apart ground beef when browning?

Yes, it is definitely stiff enough to break apart browning ground beef, as long as it is not too frozen.
