What exactly does the switch do? Isn't marked hi/lo or on/off, the videos refer to it as both, and it doesn't seem to do anything.

The switch changes the heat setting between high heat and low heat so if you are using it on fragile plastics that might melt you can use low heat. If you look closely at the green plastic opposite the directuon the switch is flipped you can see an "L" or "H" signifying the temperature setting.

Is there a model with an actual on off switch?

Our Ultra Series glue guns do not have on-and-off switches.

When using other brands of glue sticks do you have to buy “low temp” glue sticks and “high temp” glue sticks when to use for each specific setting?

I use normal Surebonder glue sticks with low temp or hot without any problem
