Description implies these fit either .453 or .625 rim holes, not both. how do you choose which size you want?

I didn't see a way to choose the size either. Normally the valves will come with the rubber gasket washer that is sized for a .453 and/or .625 rim hole or both. These just came with the .453 rim hole washer. Next time, I'll look for another seller.

Could these be considered for bicycles and ebike rims such as fatbike and mountain bike as more leakproof than bicycle-specific products?

These are car wheel valve stems for tubeless tires I am not aware of any tubeless rims and tires for any kind of bicycle

Do these valve stems come with two rubber washers or just one?

One per stem, to fit 0.453" rim holes. If you have the large (0.625") rim holes, you'll need to buy the washers for them separately.

What is the max p.s.i. rating?

As far as I know the manufacturer does not list a Max psi rating. I use them for my boat trailers at 80 psi. They are not subject to weathering and sun damage like rubber valves. Work very well.
