Knead this well, and it's wonderful!
Finding this bread mix was cause for celebration in our low-carb household. We've tried several bread recipes over the years and they just didn't taste like bread. But we've made Bob's about 12 times now and LOVE it. I agree with other reviewers -- you really aren't likely to get 21 slices out of this loaf. So we adjust the net carbs up from 5 and figure we are around 8-9 net carbs per our slices. So, it's a "treat" that you can't overdo, but it is SO yummy. My friends look at the bread and say it actually looks good. (unlike some of my low-carb food, I guess)I strongly recommend making it in a powerful breadmaker. We started with our basic $79 breadmaker but it was useless and the bread turned out like a rock. Kneading by hand improved it somewhat, but the best was using the dough hook on the Kitchenaid mixer and letting it do its work on the dough for 8-10 minutes. This bread requires really thorough kneading because the dough is really dense and thick.We made two changes to the recipe which make a loaf so light and fluffy it overflows the pan and presses up against the next oven rack above it:1) Add a scant 1/2 teaspoon of coconut sugar to the yeast and water mix -- it only adds 2 grams of carb per loaf and makes the yeast mixture froth up like crazy.2) We heat the water and cream to about 100 degrees instead of 90.Thank you, Bob's Red Mill. This is the product that allows us low-carbers to enjoy BLTs, toast, and sandwiches again. Not to mention butter drizzled on a warm loaf fresh out of the oven.

Surprisingly edible
My doctor had told me she wanted me on a low-carb diet, and I decided on the Metabolism Miracle . This diet is very restrictive on carbs, but doesn't count calories, so it's pretty easy to follow. Finding bread is almost impossible, so this came as a god-send. I have problems with my breakfasts and this will help. However, it's not really as good as bread, but it will do. I baked my first loaf yesterday, so let me break it down for you.Cons:* doesn't give the house that good fresh bread smell* it's lightly rubbery, nay, bouncy. It is a bit weird, because it doesn't break down like normal bread does when you chew it.* slightly dry* an after taste that reminds a bit of chewing tree, kind of nutty and it lingers for a long time. It isn't very pleasant.* doesn't taste as good as normal breadPro:* will be a nice addition to breakfasts and lunches, and can be used with soups!* probably a bread that will do great with sugar free jelly.* very filling!* is actually great toasted. I had planned in giving it a 3* (especially for the after taste, as I can even smell it), but because it's pretty nice toasted (feels more like toast) I am upping it to 4 stars.All in all, I am happy I tried it. It adds some dimension to the diet.

Bob's little math lesson
This low carb bread mix is OK but not tasty, yummy, can't wait to eat it like normal fresh baked bread. I prepared the first loaf following the directions and the loaf turned out quite nicely. I use a Cuisinart BMKR-200PC Fully Automatic Compact Bread Maker, 2-Pound .The odd taste some people mentioned is probably the soy flour. If you chew a bite down to the end the litle chewy bits that are left are the soy bits. If the taste of TVP (textured vegetable protein) bothers you, you probably won't like this bread. I'm not crazy about it but if I put enough intense flavored stuff on it I don't notice it.NERD ALERT! Math ahead! Skip to the bottom line of you don't want to know the nitty gritty number munching details.-----------------------The weight of this mix is 16oz. That equals 453.5g. One serving is given (in the nutrition facts drop down button) as 21g dry mix. There are 21.59 servings per mix (453.5/21=21.59). I cut my loaf into 1/4" slices and got 16 slices. That's not even close to Bob's figures. Not only that, my slices are so thin and floppy that I have to toast each piece to get it stable enough to make a sandwich.If the carb count is what you are looking for, a 1/16 loaf slice is 28.34g. This is 7.34g more than Bob's slice. That's about a third more. so according to the nutrition facts Bob's slice has 9g total carbs and 4g of that is dietary fiber (which you don't count because it isn't digested.) you are left with a net 5g carbs per Bob's slice.My slice is about a third bigger or 12g total carbs and 5.1/3g fiber for a total of 6.2/3 net carbs------------------------BOTTOM LINEIn case your eyes glazed over trying to read that the bottom line is this. Compared to a regular slice of bread coming in at 20g or so carbs per slice, Bob's low carb bread is a carb bargain. Eat and enjoy.

Bread maker makes a good loaf, nice and airy, bread is a bit chewy but, you can't have everything.
