Best Kitchen Knives for the Cost
Mercer’s “Millennium” series of kitchen knives are arguably the best performance/price ratio knives on the market. They’re always ground very thin for high-performance cutting and excellent functionality in the kitchen, the steel is quite basic and easy to grind/sharpen, though it will be (slightly) prone to burr formation because it’s somewhat soft/high-retained austenite, and the handles are very ergonomic, durable, and easy to clean. I would recommend these to everyone, from professional chefs to people who utterly abuse and neglect their kitchen knives. They don’t cost much, they cut very well, and they’re easy to maintain. Get one, get a few, they’re very good kitchen knives.

Great Quality
My wife and I enjoy cooking together. We have had some expensive knives over the years, and they were nice, but for the cost of $100+ per knife, you would think they would have held an edge better. We bought one of these for our travel trailer so we wouldn’t have to shuffle knives back and forth from the house to the trailer. We love how easy it is to sharpen, and yes they stay sharp. We now have a set of 6,8, and 10 chef knives. They are a joy to work with. Well worth the money!

Pleasantly Surprised!
I've used these types of knives in professional kitchens before and they tend to be my go to over my Wusthof because they're lighter and I don't have to baby them. So far I'm Very impressed with this knife, I have a Victorinox 8", which is fine, with a similar build but thought I'd try something new. This Mercer 6" feels a little more solid and the grip is more comfortable, at least to me. Aside from occasionally needing a bigger knife this has become my favorite and go to. One note, the blade didn't seem as sharp as I was expecting when I got it but once I sharpened it, nothing fancy, just a normal wet stone, it's been great and has actually kept it's sharpness for over a week, I've used it almost every single day mostly to cut vegetables. I'm now considering the 8" version.

Handle is Higher than Blade Edge - A Good Design
Excellent knife shape for kitchen use. Blade arrived sharp and easy to maintain. Never put good kitchen knives in the dishwasher. Heat can ruin blade temper, meaning blade hardness is weakened.

Small but mighty
If you're a home cook with small hands - look no further, this knife is made for you, and it doesn't cost an arm & a leg. The size of the blade, the beefy handle, & the balance of both in the hand make it easy and comfortable to use be it dicing, slicing, or chopping. A proper chefs knife is a must for any home cook but are often difficult to find, to get the right fit - hand size and grip strength, this knife delivers on both. We're extremely pleased with this knife and highly recommend it.

Favorite knife ever
This is my far my favorite knife. I couldn't believe how sharp it was and how well it holds an edge. Being only 6" long makes it very nice to use for cutting up vegetables. For the cost of this thing you can't beat it.

Love the size and weight of this knife!
Love the size and feel when a “regular” size chef’s is too big. Perfect for smaller handes. These are light, so you still may want a traditional, heavy, forged knife too. But I find myself reaching for this often.

Great starter
This is the first Mercer I’ve bought for home use after years of using them as “house knives” at work and the quality you get for the price tag is unbelievable. The metal is on the softer side so keep a honing rod near by but the 6” pictured above is nimble, versatile, razor sharp out of the box. The weight makes the blade like more of an extension of your hand to aid in more precise work while also having the durability to tackle the tougher tasks involving bones or squash. Long story short if you need a “I can’t believe it handled all that” type of knife, you found it with the millennia line as a whole.

Our favorite
This knife has quickly become our favorite go to knife. We use it many times daily for absolutely everything except for slicing large roasts which require a long slicer, or crusty breads which require a bread knife. This knife is made from Japanese high carbon stainless steel and it keeps its edge so well that I did not even have to hone it for 2 months in a row. The angle of its cutting edge suits our V-edge pull through knife sharpener perfectly, so just 5 passes through restores its extraordinary sharpness right back. Just beware that this knife is made from soft stainless steel. They quote its hardness as 53HRC which means 52-54HRC, and 52HRC is quite low which means that the knife's cutting edge folds with ease. This knife does need using a steel and a leather strop regularly to maintain its edge aligned and in good working condition. It only takes seconds to steel it and strop it and it brings its edge right back, increasing its sharpness 30-50%. Otherwise, it is a very comfortable well performing knife.
