Mouth-watering
The first thing that attracted me to this book was its exquisite photography of delicate and refined Japanese cuisine, and while this remains the book's principal virtue, the text, by the chef himself, explains a lot about the dishes' development, history, structure, seasonality and meaning within the broader context of Japanese cooking and Japanese culture as a whole. For those brave enough to attempt them, there are recipes for all the featured dishes in the appendix.

Ein wunderschönes Buch über moderne Kaiseki-Küche mit vielen großen Bildern und Rezepten am Ende, die wahrscheinlich nur wenige nachkochen werden. Es gibt aber auch einfache praktische Tips, z.B. wie die japanische Brühe, der Dashi, am besten gelingt. Sehr empfehlenswert.

This is a beautiful book, and is a great guide but it is not a book if you wish to try and recreate its contents. That said, makes an amazing coffee table book and probably leads to great discussions of reserving a table in Kyoto and making your travel plans to do so.
