Whats the smallest diameter pot i can use ?

A 4 inch pot should work but this stove does not work well. I bought it to have 2 burners but if you try to cook on both at the same time they do not get enough gas to stay cooking. One burner is fine so don’t pay extra for the second this product was very disappointing

Burners are roughly. 75,000 btu each This is based on comparing to similar items that list btu ratings. We use this product as our everyday cook stove. Just be sure to tighten every nut and bolt, check all gas connections, and use a heat shield under the burner. We use 12"x12" ceramic tiles. It gets very hot under the burners and will burn anything flammable.

Can you adjust the flame?

Yes you can adjust flame. I us it for canning outside. With pressure canning you have to be able to adjust flame
