Is it easy in Bun or Cookie making? I am not an expert.

You don't have to be an expert. The silicone baking mat is suitable for baking all kinds of meat and all sorts of biscuits, bread, candies, cookies. The baking sheet has on-stick surface. When making bun or cookie, the food will not stick to the mat.

What is the hightest temperature these can take?

The Reusable Heat Resistant mat can withstand high temperatures up to 500℉。

It isn't overly big so unless you have a really small baking pan I can't think why you would need to cut it. The main part of the mat is almost exactly the same size as a typical round banneton. From what I have read, most of these types of silicone baking mats contain a fiberglass core and because of this I would be hesitant to cut it.
