What are some of your favorite ways/recipes to enjoy this smoked salmon?

I love to make cakes with it the way my mother made them: In a mixing bowl combine drained salmon from two pouches and mix well with : 2 eggs 10 or so crushed crackers (Gluten-free is fine) 1/4 of small diced celery and onion 2 TB shredded or grated carrot 2 TB thinly sliced kale 1 to 2 TB of parsley or cilantro, washed, dried and chopped fine. 2 tsp Old Bay seasoning to tasteThen, heat in a frying pan 2 to 3 TB oil such as safflower or canolaDrop salmon mixture by large spoons or with a scoop into hot oil.Fry until golden on one side, then flip and brown till golden on the other side. Remove from pan onto a paper towel and drain or pat to remove excess oil. Serve with tartar sauce and lemon, veggies or salad, or on a bun with tarar sauce, onion, tomato and lettuce. Awesome!

What is the expiration date on these?

I bought the sweet and spicy and was not happy with expiration date it is.... 11/06/16

What is the optimal temperature for product storage? i am sending it to a correctional facility withouth hvac.

I keep it in my cupboard and have for years. It is great tasting. Will need a frig only if you don't finish it all.
