Why does my dough stick to the basket? Using plenty of flour but it sticks every time

Try using a mixture of rice flour, at least 50% to wheat. After each bake I leave the banneton in the switched off oven to thoroughly dry out and tap out any excess flour before storing.

Do you bake the bread in the banneton?

Banneton is for proofing only (last raise). Baking in banneton would damage both the basket and your bread.

Is it best not to wash/get the bannetons wet?

I would not recommend washing it with water - I shake and tap excess off after use and when dried use a stiff brush to clean it off.

Is the basket easy to clean?

Yes, cleaning the basket is simple. Just remove any excess flour and let it air dry. Avoid using water or soap as it can damage the rattan material.

These proofing baskets are fantastic! I got into the sourdough trend this year (a little late, I know) and had been using a colander lined with a tea towel to proof my dough in the fridge. These banneton baskets definitely upleveled my game and now let me proof and bake two loaves at once. I just cover them with a shower cap in the fridge and let them proof overnight - works perfectly. They’re lightweight, hold their shape well, and are easy to clean after use. The included dough whisk is also great and makes mixing the starter and dough much easier. Overall, this is a solid set for anyone getting serious about sourdough baking.
