is this heatsink better than the ones motherbards come with?

Yes it is better than a stock heatsink because it is a thick heavy copper heatpipe that is far more efficient in removing and dissipating heat. If your motherboard has two M2 slots and you plan to use the top slot, make sure that you have enough room to install the Rocket Heatsink. I had to removed my Video card have enough room to access the slot. My M2 drive was running around 140* degrees using the stock heatsink. After I installed the Rocket Heatsink it runs around 104* degrees. A huge improvement which reduced the overall temperature inside of my case as well and should prolong the life of the drive.

I want to use it with a sabrent nvme , problem is , it has a "warranty void if removed" sticker on the modules. what should one do to properly use?

Sticker is a heat spreader in itself. It will help increase the contact surface area between NVMe controller/flash modules and heat pads from the heatsink. Hence, do not remove the NVMe sticker! Just place the as-is SSD between provided heat pads. Then put that sandwich inside the metal heatsink.

Do i use heatsink/thermal paste on/with the heatsink itself?

No. There is an adhesive thermal pad. I ended up returning this heatsink- it would not fit either one of two standard m.2 slots on my machine.

Using with sabrent rocket 4 in 2nd slot of msi gaming edge x570, drive doesn't show up in bios. if used w/o the sink, it shows up fine. any ideas why?

Please make sure you are following the thermal tape instructions on the manual, also check if there is something physically preventing the drive to make full contact when using the heatsink.
