is that water inside of it? or Gel?

i am guessing gel. lasts longer than water

How long do these stay frozen in a cooler?

I have a large soft-sided cooler bag that I used these in and they stayed cold for 6 hours. While they didn't stay frozen, they were still cold and kept the food/drinks cool. Let me add that the temperature outside was also 95!! So, they worked quite well for me.

I'm not sure, I know when I out in freezer at night and wake up they are frozen. I used them in my cooler bag to take pizza from Ohio to Oklahoma on my flight. The flight is usually 5 to 6 hours and my food is still cold
