does it work for cutting watermelon?

While I primarily use mine for meats, I also use it for cantaloupes and watermelons that are longer than my next longer knife. Works great of course.

Looking for best knife to cut smoked ribs (is this a good one for that, others?)

This is the best knife for the price I have ever come upon. It has a very thin blade but cuts anything. Cutting ribs will be no problem.

does it need frequnt sharpening

I really can't say. I sharpen all my knives between cooks. When I use it, I usually slice anywhere between 2 and 6 briskets and lots of ribs. And when I'm done, it's sharp enough to slice lots of sausage as well. It will have a few knicks in it after I'm done, so I always sharpen it. I'm pretty rough with it though, so your mileage may vary.

Is the Victorinox Fibrox Granton Edge 10.25 inch Slicing/Carving Knife equivalent quality? 12 inch seems like a machete for huge cuts of meat

It somewhat depends on what size of meat you are cutting. I do a lot of big briskets, so the 12" is nice to have. Even for smaller meats the longer the knife the bigger the stroke you can make.

Onestamente mi aspettavo un coltello più preciso e più affilato. L'ho provato su un prosciutto e la mia opinione è che la lama sia troppo spessa per essere precisi, si rischia di avere una fetta sottile da un lato e molto spessa dll'altro.

The knife you never knew you always needed. Perfect for any kind of carving but a must for tritip, picana, prime rib, any slicing steak, and, of course, even the annual turkey. It’s an amazing slicer…very sharp and slides through meat with ease Its length makes storing it a minor challenge but I have opted for a magnetic knife holder and this is working perfectly. Just make sure it’s big enough.
