you can just iron this one, but I would also using a pressing sheet to make sure I didn't scorch the vinyl

Yes, it is made to use with a regular iron and it worked very well!

Can someone tell me which pressure setting I would set my Cricut to in order to cut through this material?

You are supposed to use the Kiss Cut, you also need to mirror the image. The plastic cover should stay intact, only the iron on piece will cut.
