The number you need is determined by size of the beam, most small sheds are probably 2 x 6 joists and spacing should not exceed 5'. Are you using 4x4 posts?

Can one be used for mailbox support?

Don’t see why not. Put a 4x4 post in the middle and should be good to go! Make sure surface is level under the block.
