I dont see why not, however any electronic device could fail so you need to take precautionsand be vigilant in case the device fail on an unexpected way. Always double check readings and use an elbow in the water as a referance. Always be on your guard as an accident can be very serious.

Could these be used in guitar cases to measure humidity?

These are just thermometers for temperature only. What you require is a hydrometer a different device entirely but there are probably small ones available. I am sure there are combined ones with both humidity and temperature displays.

Is there a way to calibrate the thermometer. mine shows 96.5 deg. c in boiling water at 100m above the sea level. it should be 99.7. how can i adjust?

Boiling temperature depends on atmospheric pressure. Pressure may rise and fall as much as 50mb with changes in weather. At 100m pressure is about 11mb less than at sea level. So low atmospheric pressure may be at least part of the explanation.
