If it is never frozen, how do you make it sashimi grade? Don't you need to flash freeze to kill the parasites?

Good question! Certain species of tuna such as Albacore are not required to be previously frozen for raw consumption. Our Albacore Tuna is sushi grade meaning that we are stating our Albacore is of the highest quality of fish we offer.

Therefore, you are safe to freeze the portions which you do not intend to use upon receipt, or within three days, by placing the vacuum-sealed bags which we pack them in, directly into your freezer. Only by fish that is shipped with dry ice

Only Three freezer packs , terrible shipping packing and no warning to tell them I live in the country. Mediocre tastes bad texture. I had to cook it to medium, because it was a bit smelly
