Yes it will fit. It is suitable for any SINGLE-SIDED, 2280 (22mm wide, 80mm long) M.2 - The 970 Evo Plus 2TB is the right size for it and is also single sided (the memory chips are all on the one side of the board).

The picture says "Random Colour". What are the options, is it just red and black?

Mine was plain black. To be honest I wasn't bothered as long as nit worked.

Yes, no problem. I currently use it with the 2tb Samsung 980 pro and no problems. Max temp on high transfer is only 54 degrees. So all good.
