the description says non-magnetic but reviews say they do combine them with magnets so what's the deal?

The stays are made of non-magnetic material (the stays themselves are not magnets), but since they are made of metal, a magnet will "stick" to them. You can therefore use them with a magnet if you like.

Will these trigger airport security metal detectors?

Thankfully, they do not seem to trigger airport security. I travel and ton and have yet to have them cause any alarms. I'm TSA pre-approved, so I don't go through the "stand up naked scanner", but the normal metal detectors do not cause problems. However, when I've left them in my carry-on, through x-ray, they have sometimes required explanations.

Does one size or the other fit most shirts? Son asked for this for Christmas, but his shirts are very random!
