The blade edge is just under 3-7/8" and the total length with handle is a smidge under 8"

Does this come with a blade cover/sheath?

Yes - only in packaging. But not for storage- but a cover is really not needed for that - Because the blade end is not sharp. I'll tell you- this knife is THE BEST FOR CUTTING CHEESE! There are imitation ones- but this is one only one to get!

is this cheese Knife okp2 ALL plastic?

Great knife. I bought my first one in 2016 and use it every day for every thing e.g. spreading peanut butter and mayo on bread, cutting sandwiches, and of course cutting cheese. A real winner
