Are the RCA outputs the only way to connect speakers? I have two outdoor speakers I'd like to wire directly into these.

These are line level input jacks, not designed to carry amplified output

I want to have at least 2 speakers per channel. can this be done? should i worry about impedance if mm going to use this for streaming via bluetooth?

The number of speakers and any impedance issues would only be related to the amplifier you are connecting this to. As far as I can tell the Pyle in wall receiver has a preamp only. It's not designed to directly drive either 4-8 ohm speakers.
