Does cork still seal with larger bore needle?

Yes - but... It has worked on all but one of maybe 100 bottles. I think the one it didn't work on was a deteriorating cork in the first place. Since it happened only once, I didn't investigate further, Hasn't happened again

Which Coravin models can use this fast pour needle?

This Needle is compatible with all Coravin systems except the Timeless Eleven or Pivot™ Wine Preservation Systems.

are these needles nserted by hand or do you have to use the machine?

You use with the Coravin- not by hand. .
