I really want organic but why is it only 95%? Also is it going to be dead?

I don't know why it's 95% only and not 100% but I bought it and I only got one little package for almost $5. I thought that was a little outrageous of a price so I switched back to rapid rise non-GMO from the co-op nearby where I live. it's not organic but it's not GMO either. And it's a fraction of the cost and it works just as well as instant yeast the big deal about instant yeast is really not all it's cracked up to be. you can use regular yeast and instant yeast interchangeably with no ill effects on the recipes I hope this helps you

I have no idea. It was flat. Dead. I would not buy it again. Horrible product.
