I have an 1-1/4 stem coming off my sink going into an 1-1/2 pipe in the wall this looks like what I need is that correct?

The pipe coming out of your wall is 1 1/2". The stem from your sink drain pop up is 1 1/4". This trap comes with a reducing hut which will adapt from the 1 1/2" size of the trap to the 1 1/4" of the tail piece. So yes, it will work. FYI typical tailpiece for kitchen sink is 1 1/2" and bathroom sink is 1 1/4". Most homes have 1 1/2" pipes as rough in waste.

Can this be used for bathtub drainline?

No. Bath tub drains are usually inaccessible so there would be no way to check for leaks. Thus you would need a sch 40 solvent weld P-trap. I would actually recommend getting a 2"x1-1/2"x1-1/2" reducing sanitary tee to attach the tub shoe & overflow to a 2" P-trap for better drainage.

do i need to go from a utility sink w/ 1-1/2 inch drainpipe to a p-trap (or not) into a garden hose?

use the p-trap. it will hold a small amount of water to prevent smells from coming from the drain.
