Diastatic malt powder is the ‘secret ingredient’ to add if you want your breads to have a stronger rise, better texture, and lovely brown crust. Make sure to only use a small amount, up to 0.5%, or your loaf may become sticky. Directions Use up to 0.5% of diastatic malt flour in yeasted dough recipes to enhance rise, texture, and color.
