The blades are made from good quality steel that is stiff enough to control, flexible enough to be useful. They hold an edge well, and are no worse to sharpen than any other stainless steel blade. The blade on all but the red handled knife taper from the back to the cutting edge which sure helps their cutting performance. The red handled knife has a 13 cm [5 inch] blade with medium serrations. It is great for slicing tomatoes. The tip is NOT sharpened - but a few minutes with a file and stone and mine is now. The green handled knife has an 8 cm [3 inch] blade and is a general purpose paring knife. This knife alone is arguably worth the price of the four! Bought another single knife at a henckle store and it went right into my knife block. These are as good, grip well, and hold an edge quite well.
