So much better than using aluminum foil! - I have been smoking meat for 4 or 5 years and have had pretty good results using aluminum foil but decided to give this a try following a recommendation from a friend. I decided to use it on a brisket I was smoking and I am sure glad I did. The meat turned out perfect, I had one friend tell me it was the best he had ever had. The paper let the water moisture out but soaked up the drippings coming off of the meat. This kept the meat tender and moist but allowed a great 'bark' to develop. Using the pink butcher paper was the only thing I did differently and it made a big difference in the end result. I would recommend this product to anyone who smokes meat. I've never used paper *by J***. on December 28, 2017* Great product! I've never used paper, always foil. My first smoke utilizing this was a couple of brisket flats that, sadly, I overcooked just a tad for my liking (totally not the fault of the paper :-) ). The paper, however, performed great, There was a nice bark that foil usually turns to mush and even though they were overcooked they were still moist if that makes sense, this alone will keep me testing. Also, this is totally a mental thing but the paper has a more rustic and natural feel than foil that I swear makes the meat taste a little better.
